This workshop reviews the history of HACCP and the reasons for its global acceptance and discusses the importance of prerequisite programs and sanitation SOPs; including how to control biological, chemical and physical hazards.

Presentations on the five initial steps and the seven HACCP principles will be followed by group exercises where you will gain a first-hand understanding of how a HACCP plan is developed. This will be followed by a discussion of how to implement and manage a plan once it's developed.

Upon completion of the class, attendees will receive a certificate bearing the seal of the Alliance and be entered into their International Database of individuals who have attended a Certified Course.

Verification activities, which are part of every facility’s successful HACCP system, include the following:

• Systematic verification that prerequisite programs are functioning and delivering the level of process control expected;
• The routine review of records to verify that monitoring, corrective actions and specific verification activities are being performed and recorded appropriately at each Critical Control Point;
• Periodic audits of the complete HACCP system to verify that the system is operating according to the written HACCP plan; and
• Periodic revalidations of the Hazard Analysis, Critical Limits, and other important parts of the HACCP plan to verify that the written plan is still accurate and effective.

The course will explore these verification activities and how to implement them. Workshops using model HACCP plans are included, to give participants 'hands-on' experience in developing these verification activities. The course is interactive, and participants are encouraged to discuss issues and suggestions from their own experiences.

Upon completion of the class, attendees will receive a certificate bearing the seal of the Alliance and be entered into their International Database of individuals who have attended a Certified Course.

During the session participants will review the PrimusLabs Ranch and Harvest Crew Audit Checklist and Guidelines v8.06, receive step-by-step instruction on the PrimusLabs online self audit system, learn to write SOPs with the PrimusLabs Manual Toolkit, and understand how to enter corrective actions.

Participants will receive:

• A USB drive loaded with important information to assist in building and verifying a food safety program
• PrimusLabs University Certificate of Completion

Participants engage in study, analysis and interpretation of national and international organic standards, case studies, development of an ecological assessment, and an excursion to a local organic farm.

Evaluation of participants is conducted through written exam and presentation of a report of inspection on a organic farm to be completed during the field trip to a local farm. Participants receive a certificate of participation from PrimusLabs University upon completion.

Keynote presentations and exercises are given throughout the course to contribute to the insight of general regulations, compliance criteria and control points. Certification is given to participants completing a final exam that has passed approval.
